Our Favourite Chicken Recipe

This is one of my children's favourite dinner recipes, we have it every Saturday night. It is totally scrumptious and very more-ish LOL

It's kind of a cheesy, creamy, garlicky chicken dish so I guess I will call it Creamy Cheese and Garlic Chicken ;) I hope you all enjoy it as much as we do!

Creamy Cheese and Garlic Chicken

Ingredients:
-- 1 tablespoon olive oil
-- 500 grams chicken breast, roughly chopped
-- 500 grams bacon, diced
-- 1 leek, sliced
-- Coriander, handful, fresh chopped
-- 3-6 cloves of garlic (adjust depending on how much you like garlic - I love it so always use loads)
-- 2-4 teaspoons chicken stock powder
-- 250gm tub cream cheese (I use Philadelphia but any brand will do)
-- 300ml cream (I use Paul's Zymil Lactose Free Cream)
-- 1 cup brown rice, cooked till soft
-- 2-3 cups cooked vegetables (I use a frozen pea and corn mix)
-- grated cheddar cheese to serve

Method:
-- Heat olive oil in pan
-- Add leek and bacon, fry until leek is soft and bacon is slightly browned

-- Add garlic and coriander, toss through for a few minutes

-- Add chicken and stir/toss until the outside of the chicken is all white
-- Add chicken stock powder, stir through

-- Add cream and cream cheese, stir through until the cheese is melted through the sauce

-- Add vegetables and simmer for approx 10 minutes
-- Add rice, sprinkle with grated cheese, serve and enjoy :)

Smoke Free For Two Years!

So yesterday was my 2 year anniversary of quitting smoking....once upon a time I never thought I could go 2 days without a smoke let alone 2 years - how things change!!

I have discovered that I have become the ex-smoker I always hated when I was still smoking LOL I will give smokers a wide berth rather than breath in that disgusting stuff, I find it makes me sick now....what a change! On the other hand I don't preach, I had to reach a point while I was smoking where I absolutely hated it and hated being controlled by it in order to successfully quit and I believe that is the key to succeeding in your quit. Your quit MUST be for you, you will have a better chance of not taking it back up again if you don't feel like you have deprived yourself of something to be desired.

After two years, I have never felt better (that I can recall anyway hehe), I put on about 6 kilos over winter but now it's time to get cracking again lol because I still have a goal to fit into some nice, pretty, feminine and flowy dresses by summer....wouldn't be too bad to have a nice bikini bod either lol

Looking forward to another year...towards the rest of my life xoxo

Change For Tagger Kits

Since I no longer make tagger sized kits and don't really want to just delete them, from August 28th 2012 I am introducing a one off fee of AUD$10 to access them. There are two options for accessing the complete collection of tagger kits.

1. Purchase the forum subscription to download them via the forums. Each kit is in it's own thread. You must be registered on the forum to purchase the subscription. The Tagger Kit Download Forum is accessible under the Subscription Only Forums.
2. Purchase the complete collection in the store. This saves time going through 60+ threads lol

I am in the process of remaking all the previews for them which will take some time, many need to have the word freebie removed....bear with me :)

Server Maintenance Bungle

My hosting service did some maintenance this morning that has kind of gutted my site, it appears a backup of old files has been put here instead of my uptodate files and there's a lot of missing files all over the place which is causing errors. I have submitted a ticket asking them to fix this, which hopefully they will do asap as I don't really want to spend hours combing the files for getting it back up to date :(

Please bear with me....hopefully the mess will be cleaned up soon!
